This wine has great concentration with a fresh mineral quality giving the wine lift and elegance. The aroma is delicate with ripe pear and apple and a subtle floral spice. The palate has beautiful balance with fine acidity and texture.

Viticultural Practices

The vines are on well-drained sandy gravels and planted to a high density of 3,000 per hectare.  They were hand-thinned to reduce the crop-load to under 3kg a vine and enhance depth of flavour. Two different clones 2/15 and Lincoln Berry Smith add complexity to the wines.  

Wine Making Details

The grapes were machine harvested,  pressed to tank and cold-settled. Clear juice was racked off and then inoculated with selected yeast strains. Fermentation was in stainless steel with cooling control for a fruit driven style. Fermentation was stopped early to leave some residual sugar (10g). The wine spent four months on yeast lees before blending.

Food and wine matching

This wine is perfectly paired with pork or roasted white meats.  The ginger finish means it would also pair well with Asian dishes.
